Poha, or flattened rice, is a staple in many Indian homes for good reason. It’s light yet filling, easily digestible, and can be customized with a rainbow of vegetables and spices. Ingredients:
- 1.5 cups Thick Poha (flattened rice)
- 1/4 cup Peanuts
- 1 tablespoon Oil or Ghee
- 1 teaspoon Mustard Seeds
- 1/2 teaspoon Cumin Seeds
- A pinch of Asafoetida (Hing)
- 8-10 Curry Leaves
- 1 small Onion, finely chopped
- 1-2 Green Chillies, slit (adjust to taste)
- 1/2 cup Mixed Vegetables (carrots, peas, diced potato – optional)
- 1/4 teaspoon Turmeric Powder
- 1 teaspoon Salt (or to taste)
- 1 tablespoon Lemon Juice
- Fresh Coriander Leaves, chopped, for garnish
- Sev (fried gram flour noodles) for garnish (optional)
Method:
- Rinse the Poha: Place the poha in a colander and rinse it gently under running water for about 1-2 minutes until it softens slightly. Ensure it doesn’t become mushy. Drain well and set aside. It should be moist but not soaking wet.
- Roast Peanuts: Heat a small amount of oil in a pan and roast the peanuts until they are crunchy and lightly browned. Remove and set aside.
- Temper the Spices: In the same pan, heat the remaining oil or ghee. Add mustard seeds and let them splutter. Then add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds until fragrant.
- Sauté Aromatics & Veggies: Add the finely chopped onions and green chillies. Sauté until the onions turn translucent. If using, add the mixed vegetables now and cook until they are tender-crisp.
- Add Turmeric & Poha: Sprinkle in the turmeric powder and salt. Mix well. Immediately add the rinsed and drained poha to the pan. Gently toss everything together, ensuring the poha is evenly coated with the spices and vegetables.
- Steam & Finish: Cover the pan with a lid and let it cook on low heat for 2-3 minutes. This allows the poha to absorb all the flavors and become fluffy.
- Garnish & Serve: Remove from heat. Stir in the roasted peanuts and lemon juice. Garnish generously with fresh coriander leaves and a sprinkle of sev (if using). Serve your invigorating Power-Packed Poha hot!
